Equipment

  • Slow cooker
  • Paring knife

Ingredients
  

  • 3 pound beef tongue
  • 1 whole onion
  • 5 cloves of garlic
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper It should really be freshly ground
  • 1 bay leaf

For tacos

  • Warm tortillas
  • Diced radishes
  • Freshly chopped cilantro
  • Lime

Instructions
 

  • Rinse the tongue. Start out by rinsing the beef tongue really well to make sure that you do away with as many impurities as possible.
  • Place lengua in cooker. Now you can place it in the slow cooker. Remove the skin from the onion, cut it in half and put it on top of it evenly distribute the garlic, salt, pepper, and the bay leaf.

  • Remove the skin. At this point, use the paring knife to remove and throw away the skin. Then you can cut it up into small cube-like pieces.
  • Slow cook the tongue. Return it to the slow cooker and bring down the heat level to just warm.
  • Serve. Allow everyone to served themselves on top of the tortillas and adding the amount of each topping, radishes, cilantro, and lime, that they want.

Tips and Ticks For Mexican Cow Tongue

If you bought a frozen product, let it thaw gradually on the bottom shelf of the refrigerator or at room temperature, this way it will lose a minimum amount of moisture.
If you have a large family you'll want to make sure that you multiply the proportions of this recipe, so for instance you may want to use 4 tongues instead of just one.
