What Is Authentic Mexican Rice With Caldo De Tomate?

Authentic Mexican Rice is typically bright orange rice served with Mexican-style beans. Although the rice is typically orange, it varies in color depending on the ingredients and seasoning used. Some people think that the yellow and orange rice is from Spain, but it isn’t. Mexican rice has its origins in the Veracruz region of Mexico.

Not everyone uses Caldo de Tomate, but truthfully, I think it is what makes this dish so delicious! This all-purpose seasoning brings both flavor and spices to the rice that making it truly authentic.

What Will You Need To Make Authentic Mexican Rice With Caldo De Tomate?

Ingredients

  • 1 tbsp. of Olive oil. Although I prefer Olive oil for cooking because it brings an extra flavor to the rice, any oil can be substituted. It is common for people to use vegetable oil, for instance.
  • 2 Cups of White Long Grain Rice. White long-grain rice is great for frying. While you can substitute it for brown or medium-grain rice, there is a possibility that the rice will stick together.
  • 1 Packet of Caldo de Tomate. Mexican rice with Knorr Caldo de Tomate is absolutely delicious. While other brands make Caldo de Tomate, Knorr has been a staple in my home for decades as the seasoning is packed with flavor!
  • 6 Oz of Tomato Sauce
  • 1 Cup of Water. I recommend using water for this authentic Mexican rice recipe because the seasoning and tomato sauce brings enough flavor. While this is the case, you may substitute chicken stock for water.
  • 1/2 an Onion Chopped
  • 1 bunch of Cilantro

Equipment

  • 1 Chopping Board
  • A Medium-Large Pot
  • 1 Slicing Knife for Vegetables

Step By Step Instructions

Step 1: Chop the Onion and Cilantro

Take the 1/2 onion and dice it up into small sections. Put it aside after you are done to continue with the Mexican rice recipe. After cleaning your chopping board, cut up the cilantro and place it to the side for garnishing.

Step 2: Prepare the Stove Top and Heat up the Oil

Heat the stovetop to medium to high heat; in the pot, place the olive oil to simmer. As it simmers, move around the oil. Be careful not to burn the oil in the pot as it can be difficult to clean!

Step 3: Place the Seasoning and Onions in the Pot

While the Olive oil is simmering, add the onions slowly and carefully. Maintain your distance, so you aren’t hurt by the popping of oil. After adding the onions to your Authentic Mexican rice with Caldo de Tomate, pour the Caldo de Tomate. Stir the mixture well.

Step 4: Add the White Long Grain Rice

The next step to make authentic Mexican rice with Caldo de Tomate is to add the rice to the pot. During this step, it is also important to lower the temperature of your stovetop to low. Before adding any other ingredients, you should stir the rice with the mixture, so the rice gets its infamous orange coloring.

Step 5: Pour the Water and Set Aside to Cook

During step 5, you should pour the water with your rice and seasoning mixture. The water will turn orange because of the seasoning mixture. Stir the rice and water well, so there aren’t any clumps of seasoning left. If you leave chunks of seasoning, there will be higher concentrations of seasoning in your final dish.

Step 6: Cover Your Pot and Cook for 20 Minutes

Last but not least, you should add a cover to your cooking pot and set a timer for 20 minutes. Personally, I prefer cooking my authentic Mexican rice with Caldo de Tomate for only 20 minutes to leave the rice a bit stickier. However, if you like your rice crispier, you can leave it cooking for up to an hour. When finished, garnish with cilantro.

Tips And Tricks For Cooking A Scrumptious Authentic Mexican Rice

This Mexican Rice recipe is easy to follow, but some tricks you can use to perfect your Authentic Mexican Rice recipe are first to heat the oil instead of combining all the ingredients. When the oil is first heated and mixed with seasoning, the flavors concentrate. If you do not heat the oil first, the water dilutes the Caldo de Tomate flavors in the rice.

Another tip and trick for cooking Authentic Mexican rice are using fresh cilantro on top of the rice. Fresh cilantro is more fragrant than old cilantro. I chop French cilantro to add to my Mexican rice recipe because it adds flavor and brings out the other flavors. Don’t be afraid to add more cilantro on top of the rice.

Not only should you cook your authentic Mexican rice on low, but it should never exceed past the ‘medium’ level of your stovetop. If you cook your rice at a higher temperature, your rice is more likely to burn quicker. When the rice cooks on high heat, the rice on the bottom burns and sticks to the bottom of the pot.
