Ingredients
  

  • 1 tbsp each of garlic powder pepper, paprika salt, and unsalted butter
  • ½ tbsp each of thyme oregano, and red pepper flakes
  • 2 tbsp each of canola oil and lime juice freshly squeezed is best
  • 2 scallions
  • 2 cup of red cabbage
  • ½ cup each of tomatoes cheddar cheese (sharp is best)
  • 1 pound of fish Good options are cod, Mali maki, and barramundi
  • 8 medium-sized flour tortillas

Instructions
 

  • Finely chop the oregano and drop it in the bowl. Then add in the garlic powder, red pepper, paprika, thyme, salt, and pepper, and mix them all together.
  • Remove the skin from the fish and rub it in the mixture.
  • Fry the fish in the skillet for 4 minutes o one side and then turn it to cook the other side for another 3 minutes. Place the fried fish on a paper towel to let the oil drip.
  • Cut the cabbage, the red onion, the cilantro, and scallions, and then mix them all in the bowl.
  • You're almost done. Warm up the tortillas on a comal or a skillet.
  • Put the vegetable mix on the tortilla and then the fried fish. Add sliced tomatoes and cheese on the top. You're all set.
