- Finely chop the oregano and drop it in the bowl. Then add in the garlic powder, red pepper, paprika, thyme, salt, and pepper, and mix them all together.
- Remove the skin from the fish and rub it in the mixture.
- Fry the fish in the skillet for 4 minutes o one side and then turn it to cook the other side for another 3 minutes. Place the fried fish on a paper towel to let the oil drip.
- Cut the cabbage, the red onion, the cilantro, and scallions, and then mix them all in the bowl.
- You're almost done. Warm up the tortillas on a comal or a skillet.
- Put the vegetable mix on the tortilla and then the fried fish. Add sliced tomatoes and cheese on the top. You're all set.
