Delicious Charro Beans

Ingredients
  

  • 1 pound of dry pinto beans
  • 2 cans of diced tomatoes & green chiles
  • 3 cloves of minced garlic
  • 2 Jalapenos diced
  • 2 Chili peppers diced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 4 cups Water
  • 1 Bunch of Cilantro finely chopped
  • 1 tsp Chili Powder

  • During this first step, you should prepare your dish. In a small bowl, add all the cut-up vegetables and peppers that you will add to the crock-pot for cooking.
  • You have to be very careful with dry Pinto Beans. Did you know that you can't eat beans raw? They have toxins that can cause indigestion among other health problems. This is why it is necessary to rinse and wash your Pinto beans with cool water. Don't stop rinsing until the water pours clear. Since bagged dry beans sit on shelves for long periods of time, they collect dust.
    Once they are rinsed, in a minimum of four cups of cold water soak them for a minimum of 6 hours. You can add salt if you want more of a taste.
  • Once the 6 hours have passed, you can then rinse out the water that remains. Rinse the Pinto beans at least twice, so that no dust or extra salt stays behind. Now, you are ready to cook Charro beans in a crock-pot. You should place all the ingredients in the crock-pot, including the water, peppers, seasoning, and beans.
  • Set the Crock-Pot on low for a minimum of nine hours. Cover and let it simmer with the timer on. Check on the Charro Beans dish at least once every three hours until tender. The smell should flow in the air throughout your home.
