Ingredients
  

  • 3 lbs beef stew meat cut into 1–2″ chunks
  • 1 tablespoon oil lard, bacon grease, or vegetable oil
  • 1 medium onion diced
  • 1 small green bell pepper diced (optional)
  • 3 tablespoons tomato sauce or 1 large fresh tomato, diced
  • 1 teaspoon garlic powder or 3 cloves minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons salt plus more to taste
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 cup water or chicken stock
  • Flour tortillas for serving, with rice or mashed potatoes as sides

Method
 

Step 1: Brown the Meat
  1. Heat oil in a large, heavy-bottomed pan over high heat. Add stew meat and brown on all sides, stirring occasionally—about 8–10 minutes. Browning deepens the flavor of the final dish.
Step 2: Sauté Veggies
  1. Add diced onion and bell pepper (if using). Cook until softened and fragrant, about 3–4 minutes.
Step 3: Add Seasonings
  1. Stir in tomato sauce or tomato, garlic powder (or fresh garlic), cumin, salt, and pepper. Mix well to coat the meat and vegetables in spices.
Step 4: Thicken the Sauce
  1. Sprinkle flour evenly over the mixture and toss well. Cook for 1–2 minutes to remove the raw flour taste.
Step 5: Simmer & Stew
  1. Slowly pour in water or stock while stirring to prevent lumps. Bring to a boil, then reduce heat to low and cover. Let simmer for 1½ hours, stirring occasionally, until the meat is tender and the gravy is rich and thick.
Step 6: Final Seasoning
  1. Taste and adjust salt or pepper if needed. If the sauce is too thin, simmer uncovered for a few more minutes to reduce. If too thick, add a splash of broth.
Step 7: Serve It Right
  1. Serve hot with warm flour tortillas for wrapping. Add rice or mashed potatoes on the side for a complete, hearty meal.
