Chili Verde Burritos with Hatch Green Chile Sauce

Ingredients
  

  • 3 lbs pork loin
  • 20 oz Hatch green chiles fresh-roasted or canned
  • 1 bunch fresh cilantro
  • 2 tbsp garlic minced
  • 1 tsp salt
  • 1 oz ancho chili seasoning
  • Large flour tortillas burrito-size
Toppings: sour cream, shredded cheese, diced onion, extra cilantro

Method
 

Step 1: Make the Green Chile Sauce
    In a blender, combine:
    1. Hatch green chiles
    2. Cilantro
    3. Garlic
    4. Salt
    5. Ancho chili seasoning
    6. Blend until smooth to create a vibrant, spicy chile verde sauce.
    Step 2: Slow Cook the Pork
    1. Place pork loin into your slow cooker.
    2. Pour the blended sauce over the meat.
    3. Cover and cook on low for 8 hours, until fork-tender and shreddable.
    4. Once done, shred the pork in the sauce with two forks.
    Step 3: Assemble the Burritos
    1. Warm flour tortillas on a skillet or in the microwave until pliable.
    2. Spoon a generous amount of the shredded pork into each tortilla.
    Top with:
    1. Sour cream
    2. Shredded cheese
    3. Diced onions
    4. Fresh cilantro
    Step 4: Wrap & Serve
    1. Fold in the edges, roll tightly into burritos, and serve hot.
    Optional: Wrap in foil to keep warm for picnics, tailgates, or packed lunches.
