Ingredients
  

  • 1 pound white American cheese cubed or shredded
  • ½ cup milk
  • 1 tablespoon butter
  • 8 oz canned green chilies chopped
  • 2 teaspoons cumin
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • Pinch of cayenne pepper optional

Method
 

Melt Base Ingredients:
  1. In a medium saucepan, combine butter, milk, and cheese. Melt gently over medium-low heat, stirring continuously until smooth.
Add Flavor:
  1. Stir in green chilies, cumin, onion powder, garlic powder, and cayenne. Mix until evenly incorporated and heated through.
Adjust Consistency:
  1. If the dip thickens too much, stir in additional warm milk a tablespoon at a time until desired consistency is reached.
Serve:
  1. Serve immediately with chips or as a sauce for tacos, enchiladas, nachos, or grilled meats.

Notes

Use white American cheese for the creamiest, smoothest result.
Melt low and slow—avoid high heat to prevent separation.
