Easy Peasy Mexican Rice

Quick and easy Mexican rice with ground beef, salsa, corn, and cheese. A one-skillet meal ready in under 30 minutes – perfect for weeknights!

Ingredients
  

  • 1 small onion diced
  • 1 pound ground beef
  • 2 tbsp taco seasoning
  • 1 tsp garlic powder
  • ½ cup salsa
  • Salt and pepper to taste
  • 1 cup white rice
  • 1 ½ cups beef broth
  • 8 ounces tomato sauce
  • 1 can 15 oz whole kernel corn, drained
  • 1 cup Fiesta blend shredded cheese

Method
 

Step 1: Brown the Beef
  1. In a large skillet over medium heat, brown the ground beef with the diced onion.
  2. Season with salt, pepper, taco seasoning, and garlic powder.
  3. Stir until well combined and the beef is fully cooked.
Step 2: Add the Rice and Liquids
  1. Stir in the beef broth, tomato sauce, drained corn, salsa, and white rice.
  2. Mix thoroughly to combine all the ingredients.
  3. Cover the skillet and bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 18–20 minutes, or until the rice is tender and has absorbed most of the liquid.
Step 3: Melt the Cheese
  1. Once the rice is fully cooked, sprinkle the shredded cheese evenly over the top.
  2. Cover the skillet again and let the cheese melt for 5 minutes.
  3. Serve hot and enjoy!
