Ingredients
  

For the Fried Potatoes
  • 4 –5 medium potatoes peeled, sliced, washed, and drained
  • 1 medium onion sliced or diced
  • Vegetable oil enough for shallow frying
  • Black pepper to taste
  • Salt to taste
For the Green Chile Beef Gravy
  • 1 pound ground beef
  • 2 cloves garlic minced
  • 2 –3 tablespoons all-purpose flour
  • cups green Hatch chile chopped
  • 64 ounces water about 4 standard 16-oz bottles

Method
 

Fry the Potatoes
  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Fry the potatoes until they reach your desired softness and crispness.
  3. Season with black pepper, onion, and salt.
  4. Drain excess oil and set aside.
Cook the Ground Beef
  1. In another skillet, cook the ground beef over medium heat until browned.
  2. Add minced garlic and cook for 1 more minute.
  3. Drain excess grease.
Make the Green Chile Gravy
  1. Sprinkle flour over the cooked beef and stir to coat evenly.
  2. Add chopped green Hatch chile.
  3. Pour in water and stir until combined.
  4. Bring to a boil, then lower heat and simmer for about 30 minutes, stirring occasionally, until thickened to a gravy-like consistency.
Serve
  1. Place fried potatoes in a bowl or on a plate. Spoon the hot green chile beef gravy over the top. Enjoy immediately.
