- If you decide that you want to make your own chili peppers for your spice mix, the best way to do this is by cutting open your chili peppers and scooping out the seeds. Place them onto a lightly greased baking sheet. There should be enough seeds to cover the baking sheet. Since this is your own spice mix, however, you can alter the number of chili flakes you want.
- Preheat the oven to 350 degrees Fahrenheit. Once it is preheated, place the chili pepper seeds and flakes in the oven for 5-10 minutes.
- In a large bowl, pour the powder mixes and mix them well. If you do not mix them well, there is a likeliness that your seasoning will not be even. This is not necessarily bad or harmful, but it can throw off the taste of your Menudo once you make it, as not all the ingredients are in the seasoning.
- In this step, you should also let the Chili flakes and seeds cool. Once they have cooled, in approximately 15-30 minutes, you can add them to the rest of your powder mixture. Once they are there, be sure to mix once again so that all the flavors are together.
- The last and quick step is to simply pour the mixture you just created into a separate container or jar. If you have a salt or pepper shaker, this could work. However, the chili pepper flakes and seeds may not fit through the small holes located on the top of the shakers.
- Personally, I recommend making this recipe and storing it into jars that are a minimum of 8oz big. These jars are compact enough that you can store them in small spaces and are easier to open. When using the seasoning, simply open the jar and measure out the exact Menudo spice mix you need.

While Mexican Menudo spice mix is both savory and spicy, you can make it tamer.
