New Mexico Green Chile Bisquick Quiche

Ingredients
  

  • ¾ cup chopped ham
  • or substitute cooked bacon or crumbled sausage
  • ½ cup diced green chile
  • use roasted Hatch green chile if available
  • 1 cup shredded or cubed cheese
  • cheddar, Monterey Jack, or a blend
  • cup chopped onion
  • or substitute 1 tbsp dehydrated onion
  • 2 cups milk
  • ½ cup Bisquick
  • 4 large eggs
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Non-stick spray for greasing the pie plate
Optional:
  • Dried parsley or paprika for color

Method
 

Step 1: Preheat the Oven
  1. Preheat your oven to 400°F (200°C). This ensures even baking and a nicely browned top.
Step 2: Prepare the Pie Plate
  1. Spray a 10-inch pie plate with non-stick cooking spray. This helps prevent sticking and makes cleanup easier.
Step 3: Layer the Fillings
  1. In the bottom of the pie plate, evenly layer the chopped ham, green chile, cheese, and onions. This ensures every slice has a little of everything.
Step 4: Mix the Egg Base
  1. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Add the Bisquick and whisk until smooth and lump-free. The mixture should be pourable and creamy.
Step 5: Combine and Pour
  1. Carefully pour the egg mixture over the layered ingredients in the pie plate. If you like, sprinkle a bit of dried parsley or paprika on top for color.
Step 6: Bake
  1. Bake in the preheated oven for 35–45 minutes. Check for doneness by inserting a toothpick or knife into the center—it should come out clean. The top will be lightly golden and puffed.
Step 7: Cool and Serve
  1. Let the quiche cool for 5–10 minutes before slicing. This allows the filling to set and makes it easier to serve.
