Ingredients
  

Enchiladas
  • 1 ½ to 2 cups red enchilada sauce homemade or high‑quality store‑bought
  • 8 tortillas 8‑inch flour or corn/flour blend (or corn if you prefer more traditional)
  • 2 ½ to 3 cups Mexican‑style shredded beef cooked and seasoned
  • 3 cups shredded Monterey Jack cheese divided
  • 1 cup shredded sharp cheddar for topping
  • Thinly sliced green onion for garnish
  • Cilantro optional, for garnish
  • Optional toppings for serving: sour cream diced tomatoes, avocado slices, hot sauce or salsa
Red Enchilada Sauce (homemade version)
  • 4 tablespoons vegetable oil
  • 6 tablespoons all‑purpose flour
  • 2 ‑3 tablespoons chili powder adjust to taste
  • 1 ½ teaspoons cumin
  • ¾ ‑1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • 4 ½ cups water

Method
 

  1. Preheat oven to 350 °F (175 °C).
Prepare baking dish:
  1. Lightly coat the bottom of a 9×13‑inch baking dish with about ½–¾ cup of enchilada sauce, spreading evenly.
Warm tortillas:
  1. Microwave the stack for ~15‑20 seconds so they’re pliable (especially important if using corn).
Fill & roll:
  1. On each tortilla, place about ⅓ cup shredded beef and about ¼ cup Monterey Jack cheese. Roll tightly and place seam‑side down in the prepared dish.
Sauce & cheese on top:
  1. Pour remaining enchilada sauce over rolled tortillas so they’re coated but not drowning. Sprinkle the remaining Monterey Jack and then the sharp cheddar evenly over the top.
  2. Bake covered: Cover the dish with foil and bake for ~25 minutes.
Finish uncovered:
  1. Remove foil and bake an additional 3‑5 minutes, until cheese is fully melted, bubbling and lightly golden.
Garnish & serve:
  1. Let rest 5‑10 minutes. Then top with sliced green onion, optional cilantro, and serve with your choice of toppings like sour cream, avocado, or hot sauce.

Notes

Warm the tortillas just enough to prevent cracking when rolling.
Layer the sauce thoughtfully—base layer in pan to prevent sticking; top layer just enough for coverage without excess sogginess.
Use freshly shredded cheese (not pre‑shredded) for best melt and texture.
Let the dish rest after baking so the sauce and cheese set—makes them easier to serve and improves texture.
