Method
- Preheat your oven to 375 °F (190 °C) and lightly grease a baking dish.
- In a large skillet over medium‑high heat, warm the olive oil. Add shrimp, crab, peppers, and onion. Season with fajita seasoning, salt and pepper. Cook until shrimp are opaque (pink) and veggies tender‑crisp—about 4‑5 minutes.
- Remove from heat. Lay each tortilla flat, and divide the seafood‑veggie mixture evenly among the tortillas. Sprinkle shredded cheese on top. Roll up each tortilla tightly, placing seam‑side down into the baking dish.
- Generously sprinkle remaining cheese over the tops of the roll‑ups. Bake for about 10‑15 minutes, or until cheese is melted, bubbly, and starting to turn golden. (You can broil briefly for extra crust if desired.)
- Let cool for a minute, then garnish with parsley or cilantro and serve immediately.
Notes
Pat shrimp dry before sautéing to get better texture (less steam).
Use fresh or good quality crab meat for best flavor; canned can work in a pinch.
Warm tortillas slightly before rolling to prevent cracking.
Don’t overfill the tortillas—too much filling can cause tearing or messy baking.
For extra crispness: after baking, broil for 1‑2 minutes with close watch.
