Ingredients
  

For the Chicken Bombs:
  • 4 boneless skinless chicken breasts, thin-sliced for easy rolling
  • 1 pound spicy Italian sausage bulk or casing removed
  • 8 oz cream cheese at room temperature
  • 1 cup sharp cheddar cheese freshly grated
  • 4 green onions scallions, finely chopped
  • 4 to 6 fresh jalapeños halved lengthwise and seeds removed
  • 12 to 16 strips regular-cut bacon
  • 2 tablespoons Cajun seasoning or favorite spice blend
  • 1 teaspoon ground black pepper
  • ½ cup barbecue sauce for brushing toward the end

Method
 

Step 1: Prep the Smoker
  1. Heat your smoker to 250°F (121°C) and add your choice of wood chips (hickory or applewood work beautifully) for smoky flavor.
Step 2: Make the Filling
  1. In a medium bowl, mix together spicy Italian sausage, softened cream cheese, shredded cheddar, and chopped green onions until smooth and evenly combined.
Step 3: Stuff the Jalapeños
  1. Slice each jalapeño in half lengthwise and remove the seeds and membranes. Fill each half with the sausage-cheese mixture, then press the halves together to form whole stuffed jalapeños.
Step 4: Season and Assemble
  1. Lay out the thin-sliced chicken breasts. Season both sides with Cajun seasoning and black pepper. Place one stuffed jalapeño in the center of each chicken slice, roll it tightly, then wrap each roll with 3–4 strips of bacon. Use toothpicks to secure the bacon and chicken so nothing unravels.
Step 5: Smoke the Bombs
  1. Place the bacon-wrapped bombs directly on the smoker grates. Smoke for about 4 hours, flipping halfway through for even cooking. Use a thermometer to ensure the internal temperature reaches 165°F.
Step 6: Glaze with BBQ Sauce
  1. In the final 20–30 minutes of cooking, brush each chicken bomb with barbecue sauce. The sauce will caramelize slightly and add a sweet-smoky finish.
Step 7: Rest & Serve
  1. Remove from the smoker and rest for 5–10 minutes. Then serve while still warm—each bite offers smoky bacon, spicy jalapeño, cheesy filling, and juicy chicken.
