Method
Make the Green Chile Sauce
- In a saucepan, melt butter over medium-high heat. Add onions and cook until translucent.
Sprinkle in flour, stir until onions are coated.
- Slowly whisk in broth. Add garlic, green chiles, oregano, and cumin. Simmer until thickened.
- Reduce heat to low and keep warm, stirring occasionally.
Cook the Tater Tots and Beef
- In a large skillet, melt butter and add thawed tater tots. Cook until crispy and golden. Remove and set aside.
- In the same skillet, brown the ground beef over medium-high heat. Drain if needed.
- Add taco seasoning, chili beans, and the crispy tots back into the skillet. Stir to combine and heat through.
Assemble the Burritos
- Warm tortillas slightly to make them pliable.
- Spoon filling into each tortilla. Add optional toppings if desired.
- Roll burritos tightly and toast them on a griddle until golden brown.
Smother and Serve
- Place burritos on plates, pour hot green chile sauce generously over the top.
- Add more toppings if desired and serve immediately.
