Taco Bell Chalupas Recipe

Crispy yet soft homemade chalupa shells filled with seasoned ground beef, cheese, lettuce, tomato and sour cream. A fun copycat of the Taco Bell favorite made from scratch.

Ingredients
  

For the Chalupa Shells:
  • cups all‑purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon table salt
  • 1 cup whole milk warmed
  • 1 tablespoon melted butter
  • Canola or vegetable oil for frying
For the Filling & Toppings:
  • 1 pound lean ground beef
  • Taco seasoning or homemade with chili powder, cumin, garlic powder
  • ½ small white onion diced
  • Shredded cheddar or Mexican blend cheese
  • Shredded lettuce
  • Diced tomato
  • Sour cream or Mexican crema
  • Taco sauce or hot sauce
  • Optional: refried beans avocado slices, jalapeños

Method
 

Prepare the Dough:
  1. In a mixing bowl whisk flour, baking powder and salt together. Add warm milk and melted butter; stir until a shaggy dough forms. Turn out onto floured surface and knead briefly until mostly smooth. Cover and let rest 10‑15 minutes.
Shape the Shells:
  1. Divide dough into 8 equal balls. Roll each into a circle about 6 inches wide and approx. ⅛‑inch thick.
Fry the Shells:
  1. Heat about 2 inches of oil in a large pot to ~ 350°F (175°C). Fry one dough circle at a time: drop into hot oil for ~5 seconds per side just to puff, then use tongs to fold gently in half and hold in oil for ~1‑2 minutes per side until golden brown and crisp. Drain on paper towels.
Prepare the Filling:
  1. In a skillet over medium‑high heat, sauté onion until softened. Add ground beef, cook until browned. Drain excess fat if needed. Stir in taco seasoning (or chili powder, cumin, garlic powder) plus a splash of water. Simmer 3‑5 minutes until flavors combine.
Assemble the Chalupas:
  1. Fill each warm shell with a scoop of beef, sprinkle shredded cheese, add lettuce, tomato, sour cream and a drizzle of taco sauce. Serve immediately.

Notes

Ensure oil stays around 350 °F; too hot = burnt shell, too cool = greasy shell.
Let dough rest so gluten relaxes and shells stay tender.
Fry shells one at a time to maintain shape and crispness.
Fill and serve immediately for best texture—waiting will soften the shell.
