Authentic Chori Pollo Recipe
Let’s get down to the reason you’re here – how to make chori pollo. The recipe we’re looking at is inspired by one from Tao of Spice. Feel free to add more or less chili powder to your dish, depending on how spicy you like your food.
Ingredients
- 1lb of chicken (preferably tenderloins)
- 9oz of Mexican chorizo
- 1 teaspoon of oregano
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of ground cumin
- 1/4 teaspoon of chili powder (or chipotle)
- 1 teaspoon of lime juice
- 1/3 cup of milk
- 4oz of American cheese
- tortillas (to serve)
Recipe
Step 1: Prepare The Chicken
Grab a bowl and add the following ingredients: oregano, cumin, chili powder, garlic powder, and onion powder. Combine the ingredients well and leave to one side. Remove your chicken tenderloins from the fridge and place them into the bowl, coating the chicken completely with the spice mix. Set aside.
Step 2: Prepare The Cheese Sauce
Grab a saucepan and place it on medium heat. Pour in the milk, along with the American cheese. Once the cheese has melted, reduce the heat to low and prepare the rest of the dish.
Step 3: Cook The Chorizo
Over medium heat, heat a skillet. When hot, add your chorizo and break it apart using a spatula. It should take around 5 minutes for the chorizo to cook. Once cooked, remove from heat and leave to one side in a bowl.
Step 4: Cook The Chicken
Add the lime juice to the now-empty skillet. This will help to remove any pieces of chorizo that are stuck. Now add your chicken tenderloins to the pan and cook until brown (this should take around 2-3 minutes). Now turn the tenderloins over and cook for a further 2-3 minutes. Remove from heat once the chicken has an internal temperature of 165 degrees, and is cooked through.
Step 5: Serve – Authentic Chori Pollo Recipe
Plate up the chicken tenderloins first, and then add the cooked chorizo. Then pour the cheese sauce over the top of the dish. You can then serve it with tortillas or other side dishes of your choice such as rice or tortilla chips. Enjoy!
NOTE: If you have any leftovers when making this dish, they can be stored in a refrigerator for around 4 days. Be sure to store any leftovers in an airtight container.
