Step 1: Make The Dough

Add the salt and masa harina to a bowl and mix well. Slowly add around 1 1/2 cups of water and mix until a dough starts to take shape. Now begin to knead the dough for several minutes until a ball forms. It should feel firm and quite springy. If this is not the case, you may need to add more flour, or hot water (depending if too wet or too dry). Once ready, cover with a damp towel and leave to rest for around 10 minutes.

Use around two tablespoons of dough for each tortilla. Portion the dough until you have used it all, and have several round balls of dough. Using a tortilla press, put one dough ball at a time into the press and make the tortillas. Repeat until you have used all the dough.

What Is Oaxacan Mole?

Mole, simply translates to “sauce”. It’s a traditional sauce in Mexican cooking, and is typically used a sauce or a marinade in many Mexican dishes.   • 1/3 cup of peanuts, chopped

  • 1 tbsp of lard

  • 3 cinnamon sticks
  • 3 tbsp of white sugar
  • 1 tsp of salt
  • 1 tbsp thyme
  • 2 tbsp cumin seeds

Recipe – Authentic Oaxacan Mole Recipe

Step 1: Toast The Chiles

Heat a pan to a medium heat. Add the ancho, chipotle and guajillo chiles to a dry pan and cook for around 3 minutes. Once toasted, remove from heat and add to a blender.

Step 2: Heat The Broth

Add 2 cups of broth to a pan and leave to simmer for around 5 minutes. Once warm, remove from heat and add to the blender.

Step 3: Toast Bread

Add the strips of tortilla and torn dinner roll to a dry pan. Be sure to stir often. Heat for around 3 minutes and add to the blender.

Step 4: Soften The Bread – Authentic Oaxacan Mole Recipe

Leave the tortillas and bread to soak in the broth in the blender. You want the bread to be soft, and this should take around ten minutes. Once softened, you can now blend the mixture of chiles, broth, bread and tortillas.

Step 5: Cook Tomatoes

Add the tomatoes and tomatillos to a pan and cook until soft. This should take around 4 minutes each side. Add to the blender.

Step 6: Toast The Nuts And Fruits

Add the lard to a pan and cook on a medium heat. Now add the raisins, peanuts, berries, cinnamon, cloves, garlic, onion, cumin and thyme. Cook for around 6-8 minutes. Now remove the whole spices and cinnamon, and add the rest of the mixture to the blender, and blend until smooth.

Step 7: Thicken The Sauce

Add the blended puree to a pan over a medium heat. Add the extra cup of chicken broth, along with the sugar, salt – and most importantly, the chocolate! Keep stirring until the sauce has melted and the sauce begins to thicken. Leave to simmer for around 10-15 minutes until it reaches the consistency you require. Your mole is now ready to serve!

Ingredients

The ingredients you’ll need for this recipe are:

  • 4-6 green chili peppers
  • 1 tbsp of oil
  • 4 minced garlic cloves
  • 1 tbsp of soy sauce
  • 1 tbsp of rice vinegar
  • 1/2 tbsp of sugar
  • 2 tbsp of water

Step 1: Prepare The Peppers

Using a knife, cut the top of the peppers off and take out the insides. Using the flat side of a knife, flatten each pepper down individually. Once all peppers are flattened, dry with a paper towel and leave to one side.

  • 5lb of chicken thighs (skin on)
  • 2 tbsp of adobo seasoning (store bought or homemade)
  • 1 tbsp of olive oil

Gather the ingredients you need and preheat your oven to 425F. Also, get a baking sheet and place a rack onto it.

Today, we’re going to be looking at an authentic chori pollo recipe. You can probably already tell by the name that chori pollo is going to be a dish containing chorizo and chicken. If you’ve not tried this simple dish yet, I would highly recommend it. It’s incredibly easy to make and is so flavorful. But how do you go about making an authentic chori pollo recipe? And what do you usually serve it with? Let’s take a closer look.

What Is Chori Pollo?

Chori Pollo is a popular Mexican appetizer. While the dish itself is served as an appetizer, it can also be used as a filling for tacos, or a dish to serve with tortilla chips, rice, or veggies – it really is versatile. The dish simply consists of chorizo, chicken, and cheese. Herbs and spices are usually then added to get their distinct chori pollo flavor.

Ingredients In Chori Pollo – Authentic Chori Pollo Recipe

The ingredients for this recipe can differ slightly depending on which recipe you’re using, but our recipe uses the following:

  • 1lb of chicken (preferably tenderloins)
  • 9oz of Mexican chorizo
  • 1 teaspoon of oregano
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of chili powder (or chipotle)
  • 1 teaspoon of lime juice
  • 1/3 cup of milk
  • 4oz of American cheese

Chorizo usually contains three main ingredients: pork, garlic and smoked paprika. Once the seasonings and pork have been mixed together, the mixture is then stuffed into casings and left to cure. The dry-cured chorizo is now ready to eat!

What Spices Are Used To Make Chorizo?

Different regions tend to include varying spices. However, the most common spices to include in chorizo sausage are garlic and smoked paprika. This is where most of the distinct flavoring comes from. Other common herbs and spices you may find in chorizo are oregano, salt and chili pepper.

What Parts Of The Pig Are In Chorizo?

Different parts of the pig can be used to make chorizo. However, typically, pork shoulder (or pork butt) or pork cheek are the cuts of meat used for chorizo sausage. You can also use belly, loin, or jowl. When it comes to chorizo sausage, the higher the fat content the better; which is why back fat is often used. The pork is then coarsely chopped and cured in a casing.

Authentic Chori Pollo Recipe

Let’s get down to the reason you’re here – how to make chori pollo. The recipe we’re looking at is inspired by one from Tao of Spice. Feel free to add more or less chili powder to your dish, depending on how spicy you like your food.

Ingredients

  • 1lb of chicken (preferably tenderloins)
  • 9oz of Mexican chorizo
  • 1 teaspoon of oregano
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of chili powder (or chipotle)
  • 1 teaspoon of lime juice
  • 1/3 cup of milk
  • 4oz of American cheese
  • tortillas (to serve)

Recipe

Step 1: Prepare The Chicken

Grab a bowl and add the following ingredients: oregano, cumin, chili powder, garlic powder, and onion powder. Combine the ingredients well and leave to one side. Remove your chicken tenderloins from the fridge and place them into the bowl, coating the chicken completely with the spice mix. Set aside.

Step 2: Prepare The Cheese Sauce

Grab a saucepan and place it on medium heat. Pour in the milk, along with the American cheese. Once the cheese has melted, reduce the heat to low and prepare the rest of the dish. 

Step 3: Cook The Chorizo

Over medium heat, heat a skillet. When hot, add your chorizo and break it apart using a spatula. It should take around 5 minutes for the chorizo to cook. Once cooked, remove from heat and leave to one side in a bowl.

Step 4: Cook The Chicken

Add the lime juice to the now-empty skillet. This will help to remove any pieces of chorizo that are stuck. Now add your chicken tenderloins to the pan and cook until brown (this should take around 2-3 minutes). Now turn the tenderloins over and cook for a further 2-3 minutes. Remove from heat once the chicken has an internal temperature of 165 degrees, and is cooked through.

Step 5: Serve – Authentic Chori Pollo Recipe

Plate up the chicken tenderloins first, and then add the cooked chorizo. Then pour the cheese sauce over the top of the dish. You can then serve it with tortillas or other side dishes of your choice such as rice or tortilla chips. Enjoy!

NOTE: If you have any leftovers when making this dish, they can be stored in a refrigerator for around 4 days. Be sure to store any leftovers in an airtight container.
